Freezing and defrosting instructions for Pork Pies 120g - 450g and Large Cutting Pies

Freezing: You can freeze most of Toppings Pork Pies (apart from large fruit topped pies). They must be wrapped in a good freezer bag with all the air removed before freezing.

Defrosting:

- Method 1 - Cooling Rack
120g to 450g Pork Pies
Remove the pie from all packaging and place on a mesh frame or cooling rack (not on a plate or the pastry will have a soggy bottom). Put in a cool dry place overnight for a minimum of 8 hours until fully defrosted. Then place into the fridge (between 3 to 5c) for a minimum of two hours before serving, this will help to firm the pastry back up.

- Method 1a - Cooling Rack
Large Pork Pies 1.1kg up to 4.1kg
Remove the pie from all packaging and place on a mesh frame or cooling rack (not on a plate or the pastry will have a soggy bottom). Put in a cool dry place. If you have a fan then place this in front of the pie as it will help to disperse the moisture. Leave overnight or for a minimum of 12 hours until fully defrosted. Then place in the fridge for a minimum of 4 hours before serving, this will help to firm the pastry back up

- Method 2 - Fan Oven
Turn on the fan only, NO heat. Most new ovens will have a defrost setting, check your oven manual. Remove all packaging and place in the oven on the centre rack leaving the door open. This will defrost the pie slightly quicker preventing the pasty going soft. You will have to check your pie until its fully defrosted (small pies 6-8 hours and large pies 10 hours minimum, depending on the oven and temperature of the room). Then place in the fridge.
Both these methods will keep the pastry crisp and tasty.

* DO NOT RE FREEZE AFTER DEFROSTING
* Do not leave in freezer longer than 3mounths
